the SUN-Java looks frequently for updates. But the installation of an Java-update collides with ColorFlowServer.exe. It must be closed before an update of Java.

But in Taskmanager the ColorFlowServer.exe is not listed as an application, but a process. How is the best way to close that? End process? Or better shutdown Prinergy with Prinergy-Administrator?

Shutdown the Prinergy server. If you attempt to end the process, Prinergy will attempt to restart it after 5 seconds, as it is implemented as a daemon.

Is there any way to totally disable Colorflow Server daemon?

It keeps starting and stopping within the Prinergy Administrator Processes pane causing instability of the Prinergy Workflow.

We do not use Colorflow at all.
